Put your pie maker to work with this recipe for spinach and cheese puffs. They’re crispy on the outside, and cheesy in the centre, and are the perfect quick meal or lunch box filler.
Ingredients
- 2 eggs
- 1 cup milk
- 1 cup self-raising flour
- 2 cups grated tasty cheese
- 100g baby spinach, roughly chopped
- 2 shallots, sliced
Method

Step 1Preheat pie maker according to manufacturer’s instructions. Lightly grease each plate.

Step 2In a large bowl, whisk together eggs, milk and flour until smooth. Fold through cheese, spinach and shallots. Add 1/3 cup measures of batter to pie maker and cook for 8 minutes until golden. Remove and keep warm. Repeat until all batter has been used.
Recipe Notes
These are delicious served straight from the pie maker, but are also yummy later at room temperature, or rewarmed in the oven or microwave.
You could serve them with a delicious tomato chutney or yoghurt dipping sauce.
