These rocky road doughnuts are a breeze to make in the pie maker and are filled with almonds, cherries and molten marshmallow for that festive rocky road flavour combo.
Ingredients
- 1 1/2 cups plain flour
- 1/3 cup cocoa
- 2 tsp baking powder
- 2/3 cup caster sugar
- 1/2 cup milk
- 2 eggs
- 125g butter, melted
- 1/2 cup flaked almonds
- 1/2 cup glace cherries, chopped
- 8 marshmallows
Glaze
- 30g butter
- 60g dark chocolate
- 1 cup icing sugar, sifted
Method

Step 1In a large bowl, whisk together flour, cocoa, baking powder and sugar. In a separate bowl, whisk together milk, eggs and melted butter. Fold wet mixture into dry mixture. Add half the almonds and half the glace cherries and fold to combine.

Step 2Preheat pie maker. When hot, lightly grease holes. Spoon mixture into each hole until half full, then place a marshmallow on top and cover with more mixture. Close lid and cook for 6-8 minutes until cooked through. Remove to a cooling rack and repeat with remaining mixture and marshmallows.

Step 3To make glaze, melt butter and chocolate in a small saucepan. Stir through icing sugar and 1-2 tablespoons of boiling water to create a smooth glaze.

Step 4Dip doughnuts upside down in the glaze, then place on a plate and sprinkle with remaining almonds and cherries.
Recipe Notes
You can omit the almonds and cherries from the batter if you prefer.
