Pie Maker Potato Nests with Smoked Salmon

Make these mini potato hash bites in a pie maker, top with some Crème fraiche and finish with smoked salmon for finger food that can be whipped up in a flash. - alicea67

Ingredients

  • 750g Sebago potatoes
  • 1 small brown onion coarsely grated
  • 30g butter melted
  • Salt and pepper
  • 25g (1/3 cup) finely grated parmesan cheese
  • Thin slices smoked salmon to serve
  • Crème fraiche or sour cream to serve
  • Fresh chives to serve

Method

  • Step 1
    Peel and coarsely grate the potatoes. Place in a sieve and press down firmly with a large spoon to remove excess water. Transfer the potato to a bowl. Stir in the onion and butter and season well with salt and pepper.

  • Step 2
    Turn on the pie maker. Press the potato mixture into the base and up the sides of the holes of the pie maker. Sprinkle each with about 2 teaspoons of the cheese. Close and cook for 8-10 minutes. Repeat with the remaining potato mixture and cheese.
  • Step 3
    Fill the nests with crème fraiche and smoked salmon. Sprinkle with chives.
