Made in a pie maker, these bite-sized mini, cheesy cobs are perfect for using up leftover bread rolls. Plus, make them vegetarian by swapping the ham for grated zucchini, sliced mushrooms or chopped capsicum.
Ingredients
- 3 eggs
- 1/3 cup thickened cream
- 1/2 cup shredded tasty cheese
- 1/3 cup smoked ham, chopped
- 1 spring onion, thinly sliced
- 3 soft bread rolls, halved crossways
- Tomato chutney *to serve
- Salt and pepper *to taste
Method
-
Step 1Use a whisk to combine the eggs and cream in a medium bowl. Season and stir though the cheese, ham and half of the spring onions.
-
Step 2Press 4 bread roll slices, crust side down, into the holes of a pie maker. Press down the bread in the centre to create a cavity.
-
Step 3Stir the egg mixture and spoon into the bread rolls. Turn on the pie maker and close. Cook for 10-12 minutes or until the egg mixture has set. Transfer to a plate. Cover with foil to keep warm.
-
Step 4Repeat with the remaining bread and egg mixture. Sprinkle with remaining spring onions and serve with tomato chutney.
