Made in a pie maker, these bite-sized mini, cheesy cobs are perfect for using up leftover bread rolls. Plus, make them vegetarian by swapping the ham for grated zucchini, sliced mushrooms or chopped capsicum. - alicea67

Ingredients

  • 3 eggs
  • 1/3 cup thickened cream
  • 1/2 cup shredded tasty cheese
  • 1/3 cup smoked ham, chopped
  • 1 spring onion, thinly sliced
  • 3 soft bread rolls, halved crossways
  • Tomato chutney *to serve
  • Salt and pepper *to taste

Method

  • Step 1
    Use a whisk to combine the eggs and cream in a medium bowl. Season and stir though the cheese, ham and half of the spring onions.

  • Step 2
    Press 4 bread roll slices, crust side down, into the holes of a pie maker. Press down the bread in the centre to create a cavity.
  • Step 3
    Stir the egg mixture and spoon into the bread rolls. Turn on the pie maker and close. Cook for 10-12 minutes or until the egg mixture has set. Transfer to a plate. Cover with foil to keep warm.
  • Step 4
    Repeat with the remaining bread and egg mixture. Sprinkle with remaining spring onions and serve with tomato chutney.
Recipe Notes

You can use pepperoni instead of ham.
