What could be easier than lamingtons made with packet cake mix and a pie maker?
Ingredients
- 1 packet of vanilla cake mix
- 40g butter, softened or melted
- 2 eggs
- 160ml milk
- 1-2 cups desiccated coconut
- 1/2 bottle chocolate topping
Method

Step 1Grease a 4-hole piemaker and preheat.

Step 2Pour the contents of the vanilla cake mix packet into a large bowl. Make a well in the centre, and then add the softened (or melted) butter, eggs and milk. Mix with a spoon or, even better, with electric beaters until combined.

Step 3Spoon two dessert spoons of batter into each piemaker hole. Close the lid and cook for four to five minutes. Remove carefully with a spoon and place on a wire rack to cool. Repeat with remaining batter.

Step 4Take two bowls and add some (but not all) of the coconut to one dish, and chocolate topping to another. Dip one of the cooled cakes into the chocolate syrup then dunk into the coconut to coat.

Step 5Place lamingtons onto the wire rack and allow to set.
Recipe Notes
A thick chocolate topping sauce works best.
My kids love to help make lamingtons. The piemaker can be hot so supervise them at all times to avoid them getting burned.
