Use your pie maker to whip up these easy banana muffins. They’re delicious, wholesome and they cook in under 10 minutes.
Ingredients
- 1 1/2 cups self-raising flour
- 1/2 tsp bicarb soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2/3 cup brown sugar
- 2-3 ripe bananas (to yield 1 cup mashed)
- 1 egg
- 100g butter, melted
- 1 tsp vanilla essence
- 1/4 cup buttermilk
Method

Step 1Preheat pie maker according to manufacturer’s instructions. Lightly grease each cooking plate.

Step 2In a large bowl, whisk together flour, bicarb, salt, cinnamon and brown sugar. In a smaller bowl, whisk together mashed bananas, egg, butter, vanilla and buttermilk. Add wet ingredients to dry ingredients, and fold through until just combined.

Step 3Scoop 1/3 cup measures of muffin batter into plates, close the lid and cook for 8 minutes. Remove muffins and continue with remaining batter.
Recipe Notes
- These muffins are best eaten right after they’re cooked, however, I can vouch for their deliciousness the next day halved and toasted with lashings of butter - just like your favourite cafe banana bread.
- If you don’t have buttermilk, just use normal milk with a squeeze of lemon juice.
