A fantastic, flavoursome chilli con carne that I have been cooking for years. It's easy and pleases most palates.
Ingredients
- 500 g beef mince
- 2 brown onions diced
- 1 green capsicum diced
- 1 chilli *to taste
- 2 garlic cloves crushed
- 1/2 cup tomato paste
- 400 g canned diced tomato
- 400 g red canned kidney beans
- 1 tsp oregano
- 1 tsp Tabasco optional
- 2 tsp ground cumin optional
- 1 cup water
Method

Step 1Mix tomatoes, tomato paste, oregano, chillies and water together in a bowl. Add salt and pepper to season.

Step 2Fry onions, capsicum and garlic in a large pot until onion is transparent.

Step 3Add mince and cook until brown.

Step 4Add tomato mixture to pot. Stir through and simmer on a medium heat until it starts to thicken.

Step 5Add kidney beans and half the cumin, cook for a further 10 minutes.

Step 6Add remaining cumin, Tabasco sauce and salt and pepper.

Step 7Remove from heat and serve over rice.
Recipe Notes
Sometimes I top the chilli con carne with 1-2 tablespoons of natural yoghurt and chopped shallots, and serve with corn chips. It can also be served in a jacket potato or flour tortilla instead of rice.
