Ingredients

  • 375 g dark chocolate melts
  • 4 drops peppermint extract
  • 185 g white chocolate melts
  • 1 tsp green liquid food colouring

Method

  • Step 1
    Line base and sides of a 20 cm square cake tin.
  • Step 2
    Place half the dark chocolate melts in a microwave safe bowl and microwave on high for 2 minutes stirring every 30 seconds with a metal spoon until smooth. Mix in 2 drops of essence.
  • Step 3
    Pout into base of tin. Tap tin on bench to rid the mix of air bubbles.
  • Step 4
    Refrigerate for 5 minutes until set.
  • Step 5
    Place white melts in bowl and repeat above remembering to stir. Mix until smooth. Add green colour and pour over first layer. Refrigerate 5 minutes.
  • Step 6
    Melt the second half of dark chocolate following the same procedure, add essence and pour over green layer. Tap to clear bubbles and refrigerate for 10-15 minutes.
  • Step 7
    Use cutters to make desired shapes and place in airtight container in fridge or freezer.
