This simple giant couscous salad with grilled veggie and creamy fetta can be served warm or cold. So you can eat it all year round.
Ingredients
- 1 pack Castello Fetta Cubes in Oil with Herbs & Garlic
- 1 1/3 cups pearl couscous, cooked and cooled
- 16 thin slices grilled zucchinis
- 1/2 lemon finely grated, zest and juice
- 1 red chilli, deseeded and chopped
- Bunch mint leaves
Method

Step 1Place the cous-cous into a mixing bowl with the oil from the fetta pack.

Step 2Add the grilled zucchini, lemon, chilli, and mint, season with freshly ground black pepper, and mix until combined.

Step 3Top with the fetta cubes and serve.
