Easy to make and a sure winner at your next dinner party or backyard BBQ.
Ingredients
- 470 g golden buttercake cake mix
- 90 g butter chopped
- 825 g canned peaches drained sliced
- 1 egg lightly beaten
- 1/4 cup thickened cream
- 300 ml vanilla custard
Method

Step 1Preheat oven to 180C.

Step 2Combine cake mix and butter in a food processor and process until combined. Alternatively rub butter into cake mix with finger tips.

Step 3Press mixture firmly over base of a greased 20 cm x 30 cm lamington pan. Bake for 15-20 minutes or until base is golden.

Step 4Arrange peaches over cooked base.

Step 5Mix custard with lightly beaten egg and cream until well combined.

Step 6Pour custard mixture evenly over peach slices and return slice to oven for 30 - 40 minutes or until custard is set.

Step 7Dust with icing sugar and serve warm with whipped cream.

Step 8Slice is best baked as required.
Recipe Notes
Cake mix may look like it won't spread across the entire pan evenly, or it may be too thin, but persist, don't forget it's a cake mix and it will rise.
