Ingredients

  • 470 g golden buttercake cake mix
  • 90 g butter chopped
  • 825 g canned peaches drained sliced
  • 1 egg lightly beaten
  • 1/4 cup thickened cream
  • 300 ml vanilla custard

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Combine cake mix and butter in a food processor and process until combined. Alternatively rub butter into cake mix with finger tips.
  • Step 3
    Press mixture firmly over base of a greased 20 cm x 30 cm lamington pan. Bake for 15-20 minutes or until base is golden.
  • Step 4
    Arrange peaches over cooked base.
  • Step 5
    Mix custard with lightly beaten egg and cream until well combined.
  • Step 6
    Pour custard mixture evenly over peach slices and return slice to oven for 30 - 40 minutes or until custard is set.
  • Step 7
    Dust with icing sugar and serve warm with whipped cream.
  • Step 8
    Slice is best baked as required.
Recipe Notes
Cake mix may look like it won't spread across the entire pan evenly, or it may be too thin, but persist, don't forget it's a cake mix and it will rise.
