My mum has been using this recipe for the more than 25 years. Every Christmas and any special occasion party or birthday its always a crowd pleaser. You can decorate the Pav with your favourite selection of berries and fruit whatever is in season, fresh is best.
Ingredients
- 6 egg whites
- 4 1/2 cup caster sugar
- 1 1/2 tsp vanilla essence
- 3 tsp white vinegar
- 3 tsp cornflour
- 12 tbs boiling water
- 600 ml thickened cream
- 2 handfuls mixed berries *to decorate
- 1 tsp cornflour
Method

Step 1Preheat oven to 190C.

Step 2Using an electric mixer place all the ingredients (except the 1 teaspoon of additional cornflour) into the bowl and beat on a high speed until very stiff. This will take approximately 15minutes.

Step 3Line a baking tray with greaseproof paper and then sift 1 teaspoon of cornflour over the area. Heap the pav mix into the centre of the tray and then spread out shaping a round circle, heap it high in the middle allowing for it to settle down in the oven.

Step 4Bake for 10 minutes and then reduce the oven temperature to 150c and continue to bake for a further 45 minutes. Then turn off the oven leaving the pav inside, open the oven door a small amount and wedge the door open with a wooden spoon if necessary. Keep the pav in the oven and let it cool down completely before removing it.

Step 5To decorate place whipped cream on top and then your favourite selection of in season berries and fruit.

Recipe Notes
If strawberries are too expensive at Xmas time, you can substituted with cherries, with stalks standing up , it looks fantastic and is a big hit with the children.
For this recipe I have used 700g free range eggs.
