Ingredients

  • 500 g spirals pasta shapes
  • 1 Lebanese cucumber cut lengthways deseeded thinly sliced
  • 1 red capsicum chopped
  • 8 spring onions sliced
  • 250 g cherry tomatoes halved
  • 1/2 cup parsley chopped fresh
  • 200 g fetta crumbled
  • 1/2 cup black olives

Dressing

  • 1/2 cup light olive oil
  • 1/4 cup white wine vinegar
  • 1 tsp grainy mustard
  • 1 garlic clove crushed
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    Add pasta to a large saucepan of boiling water, boil uncovered, for about 12 minutes, or until tender. Drain.

  • Step 2
    Rinse pasta under cold water. Drain well.
  • Step 3
    Dressing: Combine all ingredients in a screw-topped jar. Shake well.
  • Step 4
    Combine cucumber, pasta, capsicum, spring onions, tomatoes, olives and parsley in a large glass bowl.
  • Step 5
    Add dressing and mix well.
  • Step 6
    Gently stir in the feta cheese.

Equipment

  • 1 saucepan
  • 1 glass jar with lid
  • 1 glass bowl
