Passionfruit microwave pudding

This yummy passionfruit microwave pudding recipe is great to have on hand for a last-minute dessert. Whip everything up in a bowl then pour over boiling water with a few tasty sweeteners to create an easy sauce. - Greer Worsley

Ingredients

  • 60g butter, softened
  • 1/4 cup caster sugar
  • 1/2 cup milk
  • 1/2 cup condensed milk
  • 1/3 cup passionfruit pulp, strained
  • 1 1/2 cup self-raising flour
  • 1 1/2 cups boiling water
  • 1/4 cup passionfruit pulp, extra
  • 1/4 cup condensed milk, extra
  • 2 tbsp golden syrup

Method

  • Step 1
    In a microwave-proof bowl, beat together butter and sugar until smooth. Beat in milk, condensed milk and strained passionfruit pulp. Fold through flour. In a jug, mix together boiling water with extra pulp, extra condensed milk and golden syrup. Pour over batter.
  • Step 2
    Microwave on high for 8-10 minutes. Check at 8 minutes by inserting a skewer into the pudding. The cake part on top should be set, but there will be liquid in the base of the dish. Cook a little longer if required.
  • Step 3
    Serve with extra passionfruit pulp, an extra drizzle of golden syrup, and ice-cream.
Recipe Notes

Allow the pudding to sit for a few minutes before serving. The syrup in the base of the dish will thicken as it cools.

You can use tinned passionfruit if that’s all you have, but fresh is always best. Strain through a small sieve for the batter, but you can leave the seeds in for the syrup.
