A light dessert which is great when passionfruit are plentiful.
Ingredients
- 2 packet lemon jelly
- 2 egg
- 6 passionfruit
- 1 cup milk
- 1/2 cup sugar
Method

Step 1Make jelly using 2 cups boiling water and let cool (not set).

Step 2Beat eggs and sugar well.

Step 3Add milk and pulp from passionfruit.

Step 4Slowly stir cooled jelly into egg mixture.

Step 5Pour flummery mixture into a glass serving dish.

Step 6Allow several hours to set in fridge.

Step 7Serve with icecream and more passionfruit pulp if desired.
Recipe Notes
Always pour the jelly into the egg mixture, not the egg mix into the jelly! I don't know the scientific reason behind this but the flummery will curdle if this step is not done correctly.
