Ingredients

  • 3 sheets puff pastry
  • 1 tbs oil
  • 3 bacon rashers cut into strips
  • 4 spring onion finely chopped
  • 2 garlic clove finely chopped
  • 1/2 cup cheese grated
  • 1/4 cup tomato sauce
  • 1 cup cream
  • 3 egg
  • 1/4 cup thyme

Method

  • Step 1
    Preheat oven to 200C. Heat oil and lightly fry bacon, onion and garlic for 4 minutes, then leave to cool.
  • Step 2
    Lightly spray patty pan trays with oil spray.
  • Step 3
    Cut out rounds of pastry to fit patty pan trays. Lightly brush each pastry case with tomato sauce.
  • Step 4
    Sprinkle a little grated cheese over sauce and top with a small amount of bacon mix.
  • Step 5
    In a jug whisk together eggs, cream, salt and pepper. Pour into each pastry case until ¾ full.
  • Step 6
    Sprinkle top with thyme.
  • Step 7
    Cook for approximately 20 minutes or until golden and pastry has puffed.
