An appetiser that everyone will love, great for lunchboxes too.
Ingredients
- 3 sheets puff pastry
- 1 tbs oil
- 3 bacon rashers cut into strips
- 4 spring onion finely chopped
- 2 garlic clove finely chopped
- 1/2 cup cheese grated
- 1/4 cup tomato sauce
- 1 cup cream
- 3 egg
- 1/4 cup thyme
Method

Step 1Preheat oven to 200C. Heat oil and lightly fry bacon, onion and garlic for 4 minutes, then leave to cool.

Step 2Lightly spray patty pan trays with oil spray.

Step 3Cut out rounds of pastry to fit patty pan trays. Lightly brush each pastry case with tomato sauce.

Step 4Sprinkle a little grated cheese over sauce and top with a small amount of bacon mix.

Step 5In a jug whisk together eggs, cream, salt and pepper. Pour into each pastry case until ¾ full.

Step 6Sprinkle top with thyme.

Step 7Cook for approximately 20 minutes or until golden and pastry has puffed.
