Ingredients

  • 1 cup plain flour
  • 1 cup mixed fruit
  • 1/2 cup sugar
  • 2 tbs butter
  • 1/2 tsp bicarbonate of soda
  • 1/2 cup hot water
  • 1/2 cup cold water

Method

  • Step 1
    Melt the butter with hot water.
  • Step 2
    Dissolve the bicarbonate of soda in cold water.
  • Step 3
    Mix all ingredients together in a bowl.
  • Step 4
    Stand overnight.
  • Step 5
    Stir and transfer into a greased pudding bowl.
  • Step 6
    Boil for 2½ hours, or cook in a slow cooker on High with a small amount of boiling water. Check pudding after 4 hours.
Recipe Notes
This pudding can be made and left in the fridge until you are ready to boil it, mine was in the fridge for two weeks before I put it in the slow cooker. Sultanas can also be used. Delicious with custard and whipped cream. Freezes well.
