Beautiful golden and moist Christmas pudding, without all the ingredients and fuss.
Ingredients
- 1 cup plain flour
- 1 cup mixed fruit
- 1/2 cup sugar
- 2 tbs butter
- 1/2 tsp bicarbonate of soda
- 1/2 cup hot water
- 1/2 cup cold water
Method

Step 1Melt the butter with hot water.

Step 2Dissolve the bicarbonate of soda in cold water.

Step 3Mix all ingredients together in a bowl.

Step 4Stand overnight.

Step 5Stir and transfer into a greased pudding bowl.

Step 6Boil for 2½ hours, or cook in a slow cooker on High with a small amount of boiling water. Check pudding after 4 hours.
Recipe Notes
This pudding can be made and left in the fridge until you are ready to boil it, mine was in the fridge for two weeks before I put it in the slow cooker. Sultanas can also be used. Delicious with custard and whipped cream. Freezes well.
