Has there ever been a more classic combination than choc-mint? Absolutely not! There’s just something we adore about the refreshing bite of mint that cuts through the sweet chocolate pairing. This recipe is such an easy way to let yourself indulge in choc-mint heaven. It takes barely any time to put together, and then all you need to do is let it chill in the fridge overnight. Whenever I make this recipe, it’s all I think about until I get home the next day! What’s more, there’s no baking involved in the choc-mint mug cake - just a quiet night in the fridge to set. Simple, yet delicious.
Ingredients
- 1/2 cup white chocolate melts
- 300ml thickened cream
- 1/8 tsp peppermint extract
- green food colouring
- 8 Choc Ripple biscuits
- 40g Aero mint bar

Step 1Place white chocolate melts and 1/2 cup cream in a small heat proof bowl. Microwave in 30 second bursts, stirring each time, until chocolate has completely melted. Refrigerate for 2 hours to cool completely.

Step 2Place remaining cream in the bowl of a stand mixer with the whisk attachment, or use hand-held beaters, and beat until thick. Remove from bowl and reserve a couple of tablespoons of cream for garnish.

Step 3Add cooled white chocolate mixture to bowl of stand mixer and whisk on low speed until light and fluffy. Fold whipped cream through white chocolate mixture. Fold through peppermint extract and enough green food colouring to reach desired green colour.

Step 4Place a dollop of cream mixture in the base of a cup or mug. Press one Choc Ripple biscuit into the cream. Top with more cream, then another biscuit. Continue layering until you have used four biscuits and half the cream mixture. Repeat with second cup. Top each cup with reserved whipped cream. Cover and refrigerate overnight to set and soften.

Step 5Roughly chop Aero bar and sprinkle over the top of the mug cakes just before serving.

Notes:
- You can obviously increase the ingredients to make extra mug cakes, or make extra large mug cakes in extra large mugs.
- You don’t need the green food colouring but it does add a festive flair.
