Ingredients

  • 1 3/4 cup plain flour
  • 1 1/2 cup white sugar
  • 3/4 cup cocoa powder
  • 2 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 egg
  • 1 cup ground coffee
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract

Method

  • Step 1
    Preheat oven to 160C (or 150C for fan forced). Grease and line a 23 cm round cake pan.
  • Step 2
    In large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Make a well in the centre.
  • Step 3
    Add eggs, coffee, milk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin.
  • Step 4
    Pour into prepared pan. Bake for approximately 60 minutes or until toothpick inserted into centre of cake comes out clean.
  • Step 5
    Cool for 10 minutes, then remove from pan and finish cooling on a wire rack.
Recipe Notes
Make brewed coffee by mixing 250 mL of hot water with one teaspoon of ground coffee.
