A good, quick meal when you are short of time.
Ingredients
- 4 chicken breasts
- 1 tsp cornflour
- 1/2 cup flaked almonds
Sauce
- 1 orange juiced zested
- 1 cup chicken stock (liquid)
- 2 tsp cranberry jelly
Method

Step 1Pour a small amount of oil in a frying pan.

Step 2Brown chicken breasts.

Step 3Place browned chicken breasts in a casserole dish in a single layer.

Step 4Add the sauce ingredients to the frying pan, boil and cook until jelly melts.

Step 5Mix the cornflour with just enough warm water to make a runny paste. Stir the cornflour paste into the sauce.

Step 6Pour over chicken and cook at 180C for 15 minutes.

Step 7Scatter with flaked almonds just before serving.
