Ingredients

  • 4 chicken breasts
  • 1 tsp cornflour
  • 1/2 cup flaked almonds

Sauce

  • 1 orange juiced zested
  • 1 cup chicken stock (liquid)
  • 2 tsp cranberry jelly

Method

  • Step 1
    Pour a small amount of oil in a frying pan.
  • Step 2
    Brown chicken breasts.
  • Step 3
    Place browned chicken breasts in a casserole dish in a single layer.
  • Step 4
    Add the sauce ingredients to the frying pan, boil and cook until jelly melts.
  • Step 5
    Mix the cornflour with just enough warm water to make a runny paste. Stir the cornflour paste into the sauce.
  • Step 6
    Pour over chicken and cook at 180C for 15 minutes.
  • Step 7
    Scatter with flaked almonds just before serving.
