A very tasty Chinese dish.
Ingredients
- 1 kg chicken breast fillet cubed
- 1 1/2 cup cornflour
- 2 egg lightly beaten
- 1 1/4 tsp pepper
- 1 1/4 tsp salt
- 1 cup panko dried breadcrumbs
Orange Sauce
- 1 1/2 cup water
- 1/4 cup orange juice
- 2 tsp soy sauce
- 1 cup soft brown sugar
- 1/3 cup rice wine vinegar
- 1/2 tsp ginger minced
- 1/2 tsp garlic minced
- 1 1/2 tbs orange grated zested
- 1/4 tsp chilli flakes dried
- 3 tbs cornflour
- 2 tbs water
Method

Step 1Mix salt, pepper and cornflour together.

Step 2Use separate bowls for beaten eggs, breadcrumbs and cornflour and dip chicken into eggs, then into the cornflour, then again into the eggs and then back into breadcrumbs.

Step 3Preheat deep fryer to 190C, fry the chicken in canola or vegetable oil in batches until completely cooked.

Step 4Orange Sauce: In a medium saucepan combine water, soy sauce, rice wine vinegar and orange juice.

Step 5Mix well over medium heat for a few minutes.

Step 6Proceed to blend in the orange zest, soft brown sugar, garlic, ginger and chilli flakes and bring to the boil.

Step 7Combine 3 tablespoons of cornflour with water, mix well. Slowly stir the mixture into the orange sauce until it thickens.

Step 8Pour sauce over the deep fried chicken.
