Ingredients

  • 3 onions large separated sliced
  • 1 cup self-raising flour
  • 1 cup lukewarm water
  • 1 tsp white vinegar
  • 1 pinch seasoning *to taste
  • 1 L oil

Aioli

  • 1/2 cup whole-egg mayonnaise
  • 2 tsp garlic minced *to taste
  • 2 tbs fresh lemon juice *to taste

Method

  • Step 1
    Preheat a deep fryer or oil in a saucepan to 180-190C.
  • Step 2
    Place onion rings in a bowl, pour over boiling water and leave for approximately 2 minutes.
  • Step 3
    Drain onions and place them in the extra flour and toss around to coat.
  • Step 4
    Place flour, water and vinegar into a bowl and mix well, add in seasonings.
  • Step 5
    Place a few onion rings at a time into the batter, then place into the deep fryer and cook until crisp and golden. Drain well on paper towel.
  • Step 6
    Mix aioli ingredients together and place in the fridge to help flavours develop.
Recipe Notes

I usually use brown onions, but if you use red onions you probably will not need to place them in boiling water as they are sweeter.

Also just use the aioli sauce with hot chips, a definite pleaser!

Tips to convert this recipe to cook in an air fryer

Gently shake off any excess batter, dip in a bowl of oil then lay in an airfryer basket and cook until crispy and golden.
