This one-pan cheesy French onion chicken dinner is perfect for busy families and delicious alongside mash and steamed greens.
Ingredients
- 1 tbsp olive oil
- 4 x 300g chicken breasts
- 1 large brown onion, thinly sliced
- 300g bacon rashers, cut into 1cm strips
- 300ml pure / pouring cream
- 125ml (½ cup) salt reduced chicken stock
- 35g sachet salt reduced French onion soup mix
- 150g (1 cup) 3 cheese blend
- Sliced spring onions, to serve

Step 1Preheat oven to 200C/180C fan forced.

Step 2Heat oil in a large ovenproof casserole over a high heat and when hot add the chicken breasts. Cook for 2-3 minutes on each side to seal. Remove and place on a plate.

Step 3Add the onion to the pan and cook for 2 minutes, add the bacon and cook for 3-4 minutes. Pour over chicken stock and scrape the pan to remove any stuck on bits. Pour over cream and French onion soup mix, stir to combine and bring to the boil. Return to the pan chicken and toss to coat. Sprinkle over cheese and bake for 20-25 minutes or until the chicken is cooked through and the cheese is golden and bubbly.

Step 4Serve with steamed greens on the side if desired.
