Ingredients

  • 1 cup caster sugar
  • 3 eggs
  • 1 tbs golden syrup
  • 1 cup plain flour
  • 1 cup self-raising flour
  • 1/2 tsp almond essence
  • 1 tsp ground cinnamon
  • 250 g butter
  • 500 g sultanas

Method

  • Step 1
    In a large saucepan, boil the sultanas in 1 cup of water until most of the liquid has been absorbed.
  • Step 2
    Add the butter and syrup, and stir until melted. Allow to cool slightly.
  • Step 3
    Beat in the eggs and sugar.
  • Step 4
    Add the essence and dry ingredients, mixing well.
  • Step 5
    Pour into a greased tin and bake at 175C for 1½ hours.
Recipe Notes

Serve with butter if desired.
