A moist fruitcake that can be made in a slice tin, if preferred. Very quick and simple to prepare and suitable for diabetics.
Ingredients
- 750 g mixed fruit
- 2 cup coffee (liquid)
- 2 cup self-raising flour sifted
Method

Step 1Place dried fruit in a bowl. Add the strong black coffee, cover and leave overnight or a minimum of 6 hours.

Step 2Line desired baking pan with baking paper and preheat oven to 170C.

Step 3Add 2 cups of self-raising flour and stir thoroughly with a wooden spoon or spatula.

Step 4Place mixture in pan, spread top evenly and bake in oven for 45 minutes to 1 hour.

Step 5Allow cake to cool before removing from pan.

Recipe Notes
You can play with the amount of fruit coffee and flour, depending on required size of cake. Use dried fruit, mixed fruit, sultanas or raisins and strong black coffee.
