A moist fruitcake that can be made in a slice tin, if preferred. Very quick and simple to prepare and suitable for diabetics. - murrayg

Ingredients

  • 750 g mixed fruit
  • 2 cup coffee (liquid)
  • 2 cup self-raising flour sifted

Method

  • Step 1
    Place dried fruit in a bowl. Add the strong black coffee, cover and leave overnight or a minimum of 6 hours.
  • Step 2
    Line desired baking pan with baking paper and preheat oven to 170C.
  • Step 3
    Add 2 cups of self-raising flour and stir thoroughly with a wooden spoon or spatula.
  • Step 4
    Place mixture in pan, spread top evenly and bake in oven for 45 minutes to 1 hour.
  • Step 5
    Allow cake to cool before removing from pan.

  • 1 wooden spoon
Recipe Notes

You can play with the amount of fruit coffee and flour, depending on required size of cake. Use dried fruit, mixed fruit, sultanas or raisins and strong black coffee.
