Ingredients

  • 1 onion chopped
  • 2 cloves garlic
  • 3 chicken thighs diced
  • 2 carrot chopped large
  • 2 celery stick chopped
  • 1/4 cup mushrooms
  • 2 potato chopped large
  • 250 g canned corn drained
  • 2 vegetable stock cube
  • 1/2 tsp ground pepper
  • 4 bay leaf
  • 1 tsp thyme
  • 2 tbs cornflour
  • 1 tbs milk

Method

  • Step 1
    Fry onion and garlic in a little oil until transparent.

  • Step 2
    Add diced chicken pieces and brown.
  • Step 3
    Add vegetables, except the corn.
  • Step 4
    Cover with water until just over the top, and add stock and herbs. Simmer for 30 minutes.
  • Step 5
    If required, add cornflour mixture, stirring briskly to avoid lumps.
  • Step 6
    Bring to the boil, lower heat and simmer for 10 minutes.
  • Step 7
    Add the corn.

  • 1 saucepan
Recipe Notes

Green vegetables e.g. broccoli florets or beans can be added in final 7 minutes of cooking for colour/taste. Adjust to taste the vegetables, herbs, and stock. Use chicken thighs or breasts and mix cornflour with milk.
