Good for a rainy day, this is a very tasty and filling family favourite.
Ingredients
- 1 onion chopped
- 2 cloves garlic
- 3 chicken thighs diced
- 2 carrot chopped large
- 2 celery stick chopped
- 1/4 cup mushrooms
- 2 potato chopped large
- 250 g canned corn drained
- 2 vegetable stock cube
- 1/2 tsp ground pepper
- 4 bay leaf
- 1 tsp thyme
- 2 tbs cornflour
- 1 tbs milk
Method

Step 1Fry onion and garlic in a little oil until transparent.

Step 2Add diced chicken pieces and brown.

Step 3Add vegetables, except the corn.

Step 4Cover with water until just over the top, and add stock and herbs. Simmer for 30 minutes.

Step 5If required, add cornflour mixture, stirring briskly to avoid lumps.

Step 6Bring to the boil, lower heat and simmer for 10 minutes.

Step 7Add the corn.

Recipe Notes
Green vegetables e.g. broccoli florets or beans can be added in final 7 minutes of cooking for colour/taste. Adjust to taste the vegetables, herbs, and stock. Use chicken thighs or breasts and mix cornflour with milk.
