It's your regular haloumi salad... but with a difference!
Ingredients
- 250g haloumi rinsed patted dry with paper towel cut into 1cm thick chips
- 1/4 cup plain flour
- 1 egg
- 60g Doritos Cheese Supreme corn chips
- 400g corn kernels drained rinsed
- 1/4 cup peri peri mayonnaise
- 1 tbs fresh lime juice
- 4 cups mixed salad leaves
- 1 red onion thinly sliced
- 1 avocado
- 250g cherry tomatoes halved
- 1 bunch coriander leaves
- 1 splash fresh lime juice *extra *optional
Method

Step 1Preheat the oven to 180C/160C fan-forced. Line a baking tray with baking paper.

Step 2Pulse the Doritos corn chips in a food processor until coarsely chopped. Transfer to a plate. Whisk the egg in a shallow bowl. Place the flour on a separate plate.

Step 3Place the haloumi in the flour, shaking to remove excess. Dip in the egg and then press into the corn chips, pressing well to coat. Transfer to the prepared tray. Spray with oil. Bake for 12-14 minutes or until golden.

Step 4Combine the peri peri mayonnaise and the lime juice. Toss half of the peri peri mixture through the salad leaves. Place on a platter. Top with the corn, onion, avocado, tomato and haloumi chips. Drizzle with the remaining dressing. Serve topped with coriander leaves and a squeeze of lime, if you like.

You can use any Doritos flavoured corn chips if you prefer.
