Ingredients

  • 375 g brown mushrooms
  • 2 tbs olive oil
  • 1 tbs butter
  • 3 garlic cloves crushed
  • 1 onion diced small
  • 1 1/2 cups long grain rice
  • 1L chicken stock (liquid)
  • 3/4 cup shallots finely sliced
  • 1 pinch salt *to season
  • 1 pinch black pepper *to taste
  • 1 pinch vegetable stock powder

Method

  • Step 1
    Heat oil and butter in a large saucepan over medium heat, add onion and cook for 2 minutes. Add garlic, mushrooms and stir, season with salt and pepper.
  • Step 2
    Pour in stock, add rice and reduce the heat, simmer until the rice is soft. Keep stirring. If more liquid is needed, just add a splash of water. Taste and season with Vegeta stock, then add shallots, stir and cover with lid to keep warm. Serve on its own, or with cooked chicken.
