This recipe is quick and delicious. The family will love it!
Ingredients
- 375 g brown mushrooms
- 2 tbs olive oil
- 1 tbs butter
- 3 garlic cloves crushed
- 1 onion diced small
- 1 1/2 cups long grain rice
- 1L chicken stock (liquid)
- 3/4 cup shallots finely sliced
- 1 pinch salt *to season
- 1 pinch black pepper *to taste
- 1 pinch vegetable stock powder
Method

Step 1Heat oil and butter in a large saucepan over medium heat, add onion and cook for 2 minutes. Add garlic, mushrooms and stir, season with salt and pepper.

Step 2Pour in stock, add rice and reduce the heat, simmer until the rice is soft. Keep stirring. If more liquid is needed, just add a splash of water. Taste and season with Vegeta stock, then add shallots, stir and cover with lid to keep warm. Serve on its own, or with cooked chicken.
