This recipe is easy and so delicious, even my fussy toddler loves it!
Ingredients
- 1 tbs oil
- 1 leek large sliced
- 6 short-cut bacon rashers diced
- 500 g mushrooms sliced
- 1 tbs garlic crushed
- 300 ml thickened cream
- 300 g pasta
- 4 tbs parmesan cheese shredded
Method
-
Step 1Heat oil in a large pot or deep frying pan. Cook leek for about 2 minutes, until tender.
-
Step 2Add bacon and cook until golden brown and slightly crispy.
-
Step 3Add mushrooms and cook for 10-15 minutes. The mushrooms will 'sweat', so cook them until dry again, this may take up to 15 minutes.
-
Step 4Meanwhile, cook the pasta according to packet instructions.
-
Step 5Add the garlic to the carbonara mixture and cook for 1-2 minutes.
-
Step 6Add the cream and simmer for 5-10 minutes.
-
Step 7Add a ladle spoon of pasta water to thicken and add creaminess to your carbonara. Combine sauce and pasta to serve.
