Mushroom Carbonara

Ingredients

  • 1 tbs oil
  • 1 leek large sliced
  • 6 short-cut bacon rashers diced
  • 500 g mushrooms sliced
  • 1 tbs garlic crushed
  • 300 ml thickened cream
  • 300 g pasta
  • 4 tbs parmesan cheese shredded

Method

  • Step 1
    Heat oil in a large pot or deep frying pan. Cook leek for about 2 minutes, until tender.
  • Step 2
    Add bacon and cook until golden brown and slightly crispy.
  • Step 3
    Add mushrooms and cook for 10-15 minutes. The mushrooms will 'sweat', so cook them until dry again, this may take up to 15 minutes.
  • Step 4
    Meanwhile, cook the pasta according to packet instructions.
  • Step 5
    Add the garlic to the carbonara mixture and cook for 1-2 minutes.
  • Step 6
    Add the cream and simmer for 5-10 minutes.
  • Step 7
    Add a ladle spoon of pasta water to thicken and add creaminess to your carbonara. Combine sauce and pasta to serve.
Recipe Notes

Choose whatever pasta you prefer.

Serve with shredded parmesan and fresh crusty bread.
