Ingredients

  • 1 cup boiling water
  • 1 cup dates chopped
  • 1/2 cup walnuts chopped
  • 2 tbs butter
  • 3/4 cup sugar
  • 1/2 tsp bicarbonate of soda
  • 1 3/4 cup self-raising flour
  • 1 egg beaten well

Method

  • Step 1
    Cook dates, butter, sugar and bicarbonate of soda in saucepan with boiling water for 3 minutes. Allow to cool.
  • Step 2
    Add egg, walnuts and flour and combine well.

  • Step 3
    Pour into loaf tin and bake for 45 minutes at 160C.

This was delicious when I was a kid and I am still making it now 40 years later. Tastes even better the next day.
