You can have dessert ready in no time with these microwave sultana mug puddings. Whisk together the ingredients, add to the cups and pop it in the microwave to cook.
Ingredients
- 1 egg
- 1/4 cup brown sugar
- 1 tbsp milk
- 1/2 tsp vanilla essence
- 1/2 cup self-raising flour
- 1/2 tsp ground cinnamon
- 30g butter, melted
- 1/4 cup sultanas
- 1 tbsp white choc chips
- pitted cherries, to serve
- vanilla ice-cream, to serve
Method

Step 1In a small bowl, whisk together egg, sugar, milk and vanilla. Fold through flour and cinnamon, followed by the butter and sultanas.

Step 2Grease 2 coffee mugs (approx 350ml each) and divide batter between cups. Top with choc chips. Microwave for 1 1/2 minutes on high, checking at 1 minute, until cake is just set on top.

Step 3Serve immediately topped with cherries and ice-cream.
Recipe Notes
Every microwave is different, so make sure to check at the 1 minute mark to see how the pudding is going. You may need more or less than the time stated.
