Simple and tastes great.
Ingredients
- 1/2 cup Greek yoghurt
- 1/2 tsp chilli paste
- 1/2 lime juiced
- 1 tbs olive oil
For the quinoa and brown rice
- 1/2 cup brown rice cooked
- 1/2 cup quinoa cooked
- 1 bunch parsley
- 1 bunch basil
- 1/2 lime zested
- 1 pinch salt *to taste
- 1 pinch pepper *to taste
Method

Step 1Mix all ingredients and marinate chicken in fridge for around half an hour.

Step 2Fry chicken until golden and cooked through.

Step 3Set aside to rest.

Step 4Heat quinoa and brown rice in microwave for 1 minute (already cooked) and toss through lime zest herbs and salt & pepper.
Recipe Notes
I cook my brown rice and quinoa in bulk in a pressure cooker and freeze in portions ready to serve
I normally only use a small bunch of parsley and a small bunch of basil.
