Morrocan Chicken with Brown Rice and Quinoa

Ingredients

  • 1/2 cup Greek yoghurt
  • 1/2 tsp chilli paste
  • 1/2 lime juiced
  • 1 tbs olive oil

For the quinoa and brown rice

  • 1/2 cup brown rice cooked
  • 1/2 cup quinoa cooked
  • 1 bunch parsley
  • 1 bunch basil
  • 1/2 lime zested
  • 1 pinch salt *to taste
  • 1 pinch pepper *to taste

Method

  • Step 1
    Mix all ingredients and marinate chicken in fridge for around half an hour.
  • Step 2
    Fry chicken until golden and cooked through.
  • Step 3
    Set aside to rest.
  • Step 4
    Heat quinoa and brown rice in microwave for 1 minute (already cooked) and toss through lime zest herbs and salt & pepper.
Recipe Notes
I cook my brown rice and quinoa in bulk in a pressure cooker and freeze in portions ready to serve I normally only use a small bunch of parsley and a small bunch of basil.
