A healthy, delicious and spicy chicken dish.
Ingredients
- 2 chicken breast fillet chopped
- 1 tbs olive oil
- 1 onion finely chopped
- 1 cup fresh green beans roughly chopped
- 2 tsp garlic minced
- 3 tsp ginger minced
- 1 tsp paprika
- 2 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1 tsp ground turmeric
- 1 tbs dried oregano
- 1 tsp lemon rind grated
- 400 g canned chopped tomato
- 250 ml chicken stock (liquid)
- 400 g canned chickpeas
- 2 cup couscous
- 15 dried apricots finely chopped
- 1 lemon quartered
Method

Step 1Heat oil in saucepan and brown chicken, remove from pan.

Step 2Add to the pan the onion, beans, garlic, ginger, paprika, lemon rind, cumin, turmeric, cayenne pepper and oregano, and stir-fry for 1 minute.

Step 3Return chicken to pan, add tomatoes and chicken stock, simmer for 15 minutes.

Step 4Add drained chickpeas, simmer for further 5 minutes.

Step 5Prepare couscous as per instructions, and stir through apricots.

Step 6Serve chicken with couscous and a lemon quarter.
