Ingredients

  • 2 chicken breast fillet chopped
  • 1 tbs olive oil
  • 1 onion finely chopped
  • 1 cup fresh green beans roughly chopped
  • 2 tsp garlic minced
  • 3 tsp ginger minced
  • 1 tsp paprika
  • 2 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1 tsp ground turmeric
  • 1 tbs dried oregano
  • 1 tsp lemon rind grated
  • 400 g canned chopped tomato
  • 250 ml chicken stock (liquid)
  • 400 g canned chickpeas
  • 2 cup couscous
  • 15 dried apricots finely chopped
  • 1 lemon quartered

Method

  • Step 1
    Heat oil in saucepan and brown chicken, remove from pan.
  • Step 2
    Add to the pan the onion, beans, garlic, ginger, paprika, lemon rind, cumin, turmeric, cayenne pepper and oregano, and stir-fry for 1 minute.
  • Step 3
    Return chicken to pan, add tomatoes and chicken stock, simmer for 15 minutes.
  • Step 4
    Add drained chickpeas, simmer for further 5 minutes.
  • Step 5
    Prepare couscous as per instructions, and stir through apricots.
  • Step 6
    Serve chicken with couscous and a lemon quarter.
