Ingredients

Sweet bread

  • 150 ml water
  • 150 ml milk
  • 2 tsp salt
  • 3 tbs sugar
  • 600 g plain flour
  • 2 egg
  • 60 g butter chopped melted
  • 2 1/2 tsp dry yeast

Glaze

  • 2 cup sugar
  • 4 tsp ground cinnamon
  • 1/2 cup butter

Method

  • Step 1
    To activate yeast, mix the yeast in 100 mL of warmed milk and a tablespoon of sugar. Mixture should bubble up over a period of 5-10 minutes.
  • Step 2
    Mix yeast, liquid, sugar, salt, melted butter, eggs and flour together.
  • Step 3
    Knead dough until it looks smooth and satiny.
  • Step 4
    Place dough in a greased bowl and cover with plastic wrap or in a clean tea towel.
  • Step 5
    Leave dough in a warm, draft-free place to rise until it has doubled in size.
  • Step 6
    Mixture can also be placed in a breadmaker on 'dough' setting.
  • Step 7
    To assemble monkey bread, form dough into similar sized balls.
  • Step 8
    Combine sugar and cinnamon. Melt butter. Roll the balls first in the butter, then in the cinnamon mix.
  • Step 9
    Place balls in a greased ring pan, layering them to fill the pan.
  • Step 10
    Leave until dough has doubled, then bake at 180C for one hour. Cool in pan for 10 minutes and then turn out.
  • Step 11
    This can be pulled apart with forks or fingers.
Recipe Notes
Nancy Reagan served monkey bread in the White House, especially during the holidays. It was a special, rich monkey bread made with tons of butter, almost like brioche. The recipe was published by the American Cancer Society in 1985. Today most monkey breads are made similarly but instead of so much butter, they are covered with a sweet glaze.
