Ingredients

  • 1 1/2 cup plain flour
  • 1/2 cup self-raising flour
  • 1 tsp bicarbonate of soda
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1 cup milk
  • 1/2 tsp mixed spice
  • 1 cup sugar
  • 2 egg lightly beaten
  • 125 g butter
  • 1 cup golden syrup

Method

  • Step 1
    Sift flours, soda and spices in large mixing bowl. Add sugar, eggs and milk and mix well.
  • Step 2
    Melt butter and syrup in saucepan over low heat. Fold into flour mix.
  • Step 3
    Pour into 2 lined loaf tins. Bake for 50 minutes at 170C in a fan-forced oven.
