Soft pillows of pasta filled with creamy filling.
Ingredients
- 250 g wonton wrappers
- 250 g ricotta
- 1 cup frozen peas thawed
- 1/2 tsp lemon zest
- 1 tsp mint jelly
- 700 g passata
- 1 pinch pepper *to taste
- 1 pinch salt *to taste
- 3 tbs parmesan grated *to serve
Method

Step 1Mix ricotta, crushed peas, mint jelly, lemon zest, pepper and salt.

Step 2To make ravioli, place one wonton down and put a teaspoon of filling on top. Brush with egg wash around edges and place another wrapper on top. Press down to capture filling, pushing out any air.

Step 3Heat passata sauce.

Step 4Cook 2-3 ravioli in water at a rolling book for around three minutes

Step 5Drain and serve with the passata sauce and top with shaved or grated Parmesan.
