Mini turkey, cranberry and bacon rissoles

Ingredients

  • 500g turkey mince
  • 1 egg
  • 1 cup stuffing mix
  • 1/3 cup cranberry sauce
  • 2-3 streaky bacon rashers
  • 1 tbsp olive oil

Method

  • Step 1
    Preheat oven to 180C. In a bowl, combine mince, egg, stuffing mix and cranberry sauce. Season well with salt and pepper. Roll into small balls.
  • Step 2
    Cut bacon into approximately 10cm x 2cm long strips. Wrap each ball in a strip of bacon and press to seal.
  • Step 3
    Heat oil in a large frypan over medium heat. Cook bacon-wrapped balls for 1-2 minutes each side until bacon is starting to brown. Transfer to an oven tray and bake for 8-10 minutes until cooked through.
  • Step 4
    Meanwhile, combine sauce ingredients. Serve mini rissoles with dipping sauce.
Recipe Notes

The streaky end of the bacon rasher is best for this recipe.

Use toothpicks to secure the bacon if necessary.
