Ingredients

  • 2 sheets puff pastry
  • 2 eggs
  • 1 1/4 cup milk
  • 1 tomato, diced
  • 2 slices ham, diced
  • 2 spring onion *optional
  • 1/4 cup cheese, grated *optional
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    Preheat oven to 200C. Grease 2 x 12 cup patty pans.
  • Step 2
    Cut out pastry circles with biscuit cutter to fit patty pans. Use pastry scraps to make 12 circles per sheet.
  • Step 3
    Place small amount of diced ham, tomato and spring onions in each pastry case.
  • Step 4
    Beat together eggs, milk, salt, pepper and grated cheese.
  • Step 5
    Fill each pastry case with egg mixture. Be careful not to overfill or it will be difficult to remove quiches from pan.
  • Step 6
    Bake for 10 - 12 minutes. Quiche is ready when nicely browned and filling puffs up.
  • Step 7
    Allow to cool slightly then remove quiche to wire rack
Recipe Notes

Use any filling you might prefer - or what you can find in the fridge. These are very versatile. Asparagus tips, corn kernels, chicken or salmon instead of ham. Vary fillings for both meat lovers and vegetarians. Can be made in advance and frozen. Reheat gently before serving.
