Ingredients

  • 3 eggs
  • 50g (1/3 cup) plain flour
  • 60ml (¼ cup) thickened cream
  • 1 medium zucchini, grated
  • 80g shaved ham, finely chopped
  • 1/3 cup frozen peas
  • 80g (½ cup) grated tasty cheese
  • 6-8 cherry tomatoes, thinly sliced

Method

  • Step 1
    Preheat oven to 180°C fan forced. Grease a 2 x 12 x 1 tablespoon capacity muffin tray.
  • Step 2
    Whisk eggs, flour and cream in a bowl. Add the zucchini, ham, peas and cheese and mix to combine. Season with salt and pepper to taste.
  • Step 3
    Place 1 tablespoon of mixture into each hole in the muffin pan, top with a slice of cherry tomato, if desired, and bake for 20-24 minutes or until golden and set. Leave to cool slightly before serving.
