These mini crustless quiche bites are easy, quick and taste great! They're the perfect size for lunchboxes, and a great way to keep the kids tied over until dinner.
Ingredients
- 3 eggs
- 50g (1/3 cup) plain flour
- 60ml (¼ cup) thickened cream
- 1 medium zucchini, grated
- 80g shaved ham, finely chopped
- 1/3 cup frozen peas
- 80g (½ cup) grated tasty cheese
- 6-8 cherry tomatoes, thinly sliced
Method

Step 1Preheat oven to 180°C fan forced. Grease a 2 x 12 x 1 tablespoon capacity muffin tray.

Step 2Whisk eggs, flour and cream in a bowl. Add the zucchini, ham, peas and cheese and mix to combine. Season with salt and pepper to taste.

Step 3Place 1 tablespoon of mixture into each hole in the muffin pan, top with a slice of cherry tomato, if desired, and bake for 20-24 minutes or until golden and set. Leave to cool slightly before serving.
