Old-fashioned meatloaf gets a facelift with plenty of grated carrot and zucchini, as well as a handful of pantry staples.
Ingredients
- 2 tbsp oil
- 1 brown onion, diced
- 2 cloves garlic, crushed
- 1kg beef mince
- 2 carrots, peeled and grated
- 2 zucchini, grated
- 1 tbsp soy sauce
- 1/2 cup tomato sauce
- 1 tsp dijon mustard
- 1 tsp ground cumin
- 2 tsp beef stock powder
- 1 1/2 cups breadcrumbs
- 2 eggs
Method

Step 1Preheat oven to 180C conventional. Grease a 22cm x 11cm loaf tin.

Step 2Heat oil in a small frypan over gentle heat. Cook onion and garlic for 4-5 minutes until very soft. Allow to cool.

Step 3In a large bowl, combine remaining ingredients with cooled onion mixture. Press into prepared loaf tin and smooth the top. Place on an oven tray and bake for 50 minutes. Allow to cool slightly in the tin, then turn out onto a serving platter. Cut into thick slices.

Step 4Serve with salad or vegetables.
Recipe Notes
This is delicious with gravy. Make your own from scratch or whip up a simple gravy powder version.
Leftovers will freeze well - wrap individual slices.
