A tasty, filling and nutritious soup.
Ingredients
- 2 tbs olive oil
- 2 onion chopped
- 3 garlic clove chopped
- 3 tsp Mexican seasoning
- 1 tsp smoked paprika
- 800 g canned chopped tomato
- 6 cups beef stock (liquid)
- 1/3 cup tomato paste
- 1 1/2 cup red lentils
- 2 tbs brown sugar
- 1/3 cup fresh coriander chopped
Method

Step 1In a large saucepan, heat the oil and add onions and garlic. Cook until light golden.

Step 2Mix in the Mexican seasoning and smoked paprika.

Step 3Add tomatoes, stock, tomato paste, lentils and sugar.

Step 4Bring to the boil, stir, then reduce heat and simmer for 45 minutes.

Step 5Add chopped fresh coriander just before serving.

Step 6Serve with sour cream, extra chopped coriander and cheesy scones.
Recipe Notes
If you can't find Mexican seasoning, use a mix of 1 teaspoon ground cumin, 1 teaspoon ground coriander and 1 teaspoon ground black pepper.
