These biscuits are a little different and very tasty.
Ingredients
- 100 g butter brought to room temperature
- 150 g self-raising flour
- 100 g soft brown sugar
- 100 g peanuts roughly chopped
- 4 tsp instant coffee powder
- 2 tsp hot water
- 1/4 tsp ground cinnamon
Method

Step 1Pre-heat oven to 180C.

Step 2Cream butter and sugar. Add chopped peanuts and dissolved coffee, mix well.

Step 3Sift flour and cinnamon, add to butter mixture and beat well.

Step 4Roll dough into small balls with hands, arrange on baking trays lined with baking paper, press down with fork.

Step 5Bake in oven for 10-15 minutes or until biscuits begin to firm up.

Step 6Cool on wire rack.

Recipe Notes
Use salted peanuts and dissolve instant coffee in hot water.
