At just $1.88 per serve, this quick and easy Mexican pasta salad with creamy Tabasco dressing is a party staple.
Ingredients
- 250g dried curly pasta
- 1/3 cup whole-egg mayonnaise
- 2 tbs sour cream
- 2 tbs lime juice
- 1/2 tsp Tabasco sauce
- 2 tbs finely chopped fresh coriander leaves, plus extra leaves to serve
- 1 red capsicum, cut into 1cm pieces
- 125g can corn kernels, drained, rinsed
- 4 spring onions, thinly sliced, plus extra to serve
- 250g cherry tomatoes, halved
- 1/3 x 200g packet corn chips
- 1 avocado, chopped
- A pinch of salt and pepper
Method

Step 1Cook pasta in a large saucepan of salted boiling water following packet directions. Drain. Refresh under cold water. Drain well.

Step 2Whisk mayonnaise and sour cream together in a bowl until smooth. Add lime juice, Tabasco sauce, coriander and 2 tbs water. Season with salt and pepper. Whisk until combined.

Step 3Place pasta in a large serving bowl. Add capsicum, corn, onion, 3/4 of the mayonnaise mixture and 3/4 of tomato. Stir to combine.

Step 4Top with corn chips, avocado and remaining tomato. Drizzle with remaining mayonnaise mixture. Sprinkle with extra coriander and onion. Serve.
