If you love tacos and Mexican food, then you will love this easy chicken pasta. A hit with all ages!
Ingredients
- 500g chicken thighs diced
- 425g canned corn kernels drained
- 1 red capsicum diced
- 35g taco seasoning
- 2 tbs tomato paste
- 1 cup water
- 500g pasta
Method

Step 1Add chicken pieces to a greased frypan or saucepan and fry until browned.

Step 2Add corn kernels, capsicum and taco seasoning mix to chicken, stir over a low heat for 2 minutes.

Step 3Add tomato paste and water, then bring to the boil.

Step 4Reduce heat and simmer for 5-10 minutes until chicken is tender.

Step 5Meanwhile cook pasta in a large pot of boiling water until al dente. Drain.

Step 6Add cooked pasta to chicken mixture and combine to heat through.
Recipe Notes
I also add around half a cup of cheddar cheese to the pasta, which I think adds to the dish.
