Ingredients

  • 500g chicken thighs diced
  • 425g canned corn kernels drained
  • 1 red capsicum diced
  • 35g taco seasoning
  • 2 tbs tomato paste
  • 1 cup water
  • 500g pasta

Method

  • Step 1
    Add chicken pieces to a greased frypan or saucepan and fry until browned.
  • Step 2
    Add corn kernels, capsicum and taco seasoning mix to chicken, stir over a low heat for 2 minutes.
  • Step 3
    Add tomato paste and water, then bring to the boil.
  • Step 4
    Reduce heat and simmer for 5-10 minutes until chicken is tender.
  • Step 5
    Meanwhile cook pasta in a large pot of boiling water until al dente. Drain.

  • Step 6
    Add cooked pasta to chicken mixture and combine to heat through.
Recipe Notes

I also add around half a cup of cheddar cheese to the pasta, which I think adds to the dish.
