A tasty alternative to plain mashed potato topped with crispy bacon bits and golden cheese.
Ingredients
- 1kg potato chopped peeled
- 30g butter
- 1/2 cup milk hot
- 1 cup bacon rashers chopped
- 2 spring onion sliced
- 1 1/2 cup cheese grated
Method

Step 1Preheat oven to 180C.

Step 2Cook potatoes and mash with butter and hot milk.

Step 3Fry the bacon until slightly crisp.

Step 4Add half the bacon, half the spring onions and one cup of cheese to the potato mixture.

Step 5Spread into a greased, shallow dish, like a quiche dish.

Step 6Top with the remaining spring onion, bacon and cheese.

Step 7Bake for approximately 40 minutes, or until golden on top.
Recipe Notes
You can add a small can of creamed corn to the potato mix, to make it a bit sweeter for the children.
