These little chocolate marshmallow balls are just pure fun! They’re rolled in 100s & 1000s so they look bright, happy and party-ready, and inside is a fudgy chocolate mixture speckled with chewy, colourful marshmallows. They’re the sort of thing you bring to a kids’ birthday party or school fete and they disappear before you’ve even put the plate down, so it’s best to make a double batch. The best part? You only need five ingredients, and they’re easy enough to get the kids involved: rolling, dipping, and inevitably playing with a little of the sprinkles along the way…

How to make easy marshmallow truffles: key tips

I recommend chopping the mini marshmallows – just in half is enough. It gives you a smoother, rounder ball without big chunks poking out. Cold marshmallows are much easier to chop, so I like to refrigerate the bag first, but scissors work too if you find that easier.

The mixture will feel a bit sticky and wet when you start rolling, which is totally normal. Slightly wet or lightly oiled hands make the job so much easier and help you shape the balls evenly. If it’s hot where you are, refrigerate the mixture for up to 5 hours (or even overnight) before rolling, so it firms up. If you chill the tray before you start, it stops the balls from flattening as you place them down. Work fairly quickly and you’ll be set!

What goes into these easy marshmallow truffles?

You can use any chocolate you like here. Milk chocolate is perfect for kids’ parties, but if you’d prefer something a little less sweet, dark chocolate works really well too. A splash of vanilla extract brings a little extra warmth and flavour to the mixture. It’s not essential, so if you don’t have any on hand, you can skip it.

The thickened cream is what transforms the melted chocolate into that creamy, fudge-like mixture. It’s essentially a ganache that’s firm enough to roll yet still soft enough to melt in your mouth. Once you’ve mastered this base, you can play around with the mix-ins: chopped chocolate bars, nuts, dried fruit or whatever you love. You can also swap the 100s & 1000s for chocolate sprinkles, cocoa powder, coconut or even crushed biscuits. Once you know the base, your imagination has no limits and you can take the flavour and look in any direction you like!

Mini marshmallows are ideal because they scatter through the mixture and give each ball chewy, colourful little pops. You can find them in the baking aisle, but if you only have full-size marshmallows, just chop them into small pieces and they’ll work just fine.

Ingredients

  • 180g milk chocolate, chopped
  • 80ml (1/3 cup) thickened cream
  • 1/2 tsp vanilla extract, optional
  • 60g (1 cup) mini marshmallows, chopped
  • 125g (1/2 cup) 100’s & 1000’s

Method

  • Step 1
    Place the chocolate and cream in a microwave-safe bowl. Microwave on high in 30 second bursts for about 1 minute, stirring with a metal spoon between burst, until melted and smooth. Stir in vanilla, if using, and cool for 10 minutes.
  • Step 2
    Stir in the marshmallows. Refrigerate for about 3 hours, stirring occasionally, or until firm enough to roll into balls (the mixture will still be a bit sticky).
  • Step 3
    Line a chilled baking tray with baking paper. Place 100’s & 1000’s in a shallow dish. Roll tablespoons of mixture into balls and roll in sprinkles.
  • Step 4
    When set line baking trays with paper, roll mixture into balls, then roll in sprinkles.
  • Step 5
    Place on trays and refrigerate for 1 hour or until firm. Serve.
