A fondant for covering cakes.
Ingredients
- 450 g marshmallows small
- 910 g icing sugar
- 2 tbs vanilla essence
- 1 tbs butter essence
- 1 tbs almond essence
- 1 tsp shortening
Method

Step 1Place marshmallows in a large microwave-safe bowl and microwave on high for 1 minute until the marshmallows are melted. The marshmallows will swell when melted.

Step 2Place essences with marshmallows, and stir to smooth and blend mixture.

Step 3Grease the bowl and beaters of a mixer well with shortening.

Step 4Place ¾ of the icing sugar in the mixer bowl and add the melted marshmallows.

Step 5Mix on low speed for a few minutes, then check the consistency of the fondant. If sticky, add some of the remaining icing sugar and mix again for a minute or so.

Step 6Repeat this step until the fondant is firm and not sticky.

Step 7Place fondant on a greased work surface and knead with greased hands for a few minutes until fondant is smooth.

Step 8Wrap in plastic wrap and rest for at least 30 minutes before using.
