Ingredients

  • 200g maple glazed streaky bacon
  • 250g cream cheese, softened
  • 1/4 cup caster sugar, plus extra for dusting
  • 1/2 tsp powdered cinnamon
  • 4 eggs
  • 150ml thickened cream
  • 150g pkt mini croissants, cut into 1-2cm dice
  • Maple syrup, for serving

Method

  • Step 1
    Preheat oven to 170°C. Grease a 6 x 1 cup capacity muffin tin.
  • Step 2
    Heat a medium frying pan over a medium high heat, add bacon and cook for 2-3 minutes, stirring occasionally. Add croissants and cook for 1-2 minutes to toast slightly. Remove from heat.
  • Step 3
    Place cream cheese, sugar, cinnamon and eggs in a food processor and process until smooth, add cream and process to combine. Transfer to a bowl and fold in bacon and croissants.
  • Step 4
    Evenly divide mixture between the 6 muffin holes. Sprinkle with a bit more sugar and bake for 25-30 minutes or until puffed and golden.
  • Step 5
    Serve drizzled with maple syrup.
