A lovely moist cake, a great family favourite and best of all no added sugar.
Ingredients
- 425 g canned mango in syrup
- 500 g mixed dried fruit
- 1/2 cup water
- 1 1/2 tsp bicarbonate of soda
- 1 1/2 cup self-raising flour
- 2 egg lightly beaten
Method

Step 1Grease a 15 cm x 25 cm loaf pan and line base and sides with baking paper.

Step 2Combine the undrained mango slices, mixed dried fruit and water in a large pan.

Step 3Bring to boil and simmer, uncovered, for 1 minute. Allow to cool.

Step 4Stir in eggs and combined sifted bicarbonate of soda and flour.

Step 5Mix well and pour mixture into prepared pan.

Step 6Cook in a moderately slow oven, about 160C for 1 hour or until cooked.

Step 7Cool cake in pan.
