South African Malva pudding

This warming pud is a firm favourite in South Africa, where it originated. You could almost say this is our version of a caramel pudding. You make a brown sugar and cream sauce and pour it over the soft sponge as soon as it comes out the oven. The sponge soaks it up and you're left with a gooey, caramel pud that will literally bring families together. - Lindy Lawler

Ingredients

  • 1 1/2 cup plain flour
  • 3/4 cup milk
  • 2 tsp baking powder
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp baking soda
  • 3 tbsp apricot jam
  • 2 tbsp melted butter

Sauce

  • 2 cups boiling water
  • 2 cups brown sugar
  • 10ml vanilla essence
  • 1/3 cup cream or milk

Method

  • Step 1
    Preheat oven to 180 C. Sift flour, baking powder and brown sugar into a mixing bowl.
  • Step 2
    Add the eggs, baking soda, jam, butter and milk. Mix thoroughly until all the ingredients are incorporated. Pour into a greased 20cm x 20cm baking dish. Bake for 25 minutes or until a knife inserted into the centre comes out clean. Remove from the oven.
  • Step 3
    Meanwhile, make the sauce by combining wate, sugar, vanilla and cream (or milk) in a saucepan. Bring to a simmer then pour the hot sauce over the pudding a little bit at a time until the pudding has soaked up all the sauce. Serve warm with cream or ice cream.
