This divine combination of scrumptious pavlova, chocolatey whipped cream and crushed Maltesers has to be tasted to be believed. It’s melt-in-the-mouth malty-chocolate goodness!
Ingredients
Pavlova
- 4 egg whites
- 1 cup caster sugar
- 1 pinch salt
- 1 tsp white vinegar
- 300 ml thickened cream
- 1 tsp caster sugar *extra
- 2 tsp cocoa
- 200 ml sour cream
- 60 g Mars Maltesers
- 1 tbs cornflour
Ganache
- 125 ml cream
- 100 g dark chocolate chopped
Method

Step 1Preheat oven to 120C. Line an oven tray with baking paper.

Step 2Pavlova: In a stand mixer or using hand-held beaters, whisk egg whites until soft peaks form. Add sugar a spoonful at a time, beating well between each addition. Once all the sugar has been incorporated and the mixture is thick and glossy, whisk on high for a further 5 minutes, then add salt, cornflour and vinegar and whisk to incorporate.

Step 3Spoon meringue onto lined tray to create an 18cm circle, piling it high and smoothing the sides. Bake for 1 1/4 hours, then leave in the oven with the door ajar to cool for at least two hours.

Step 4Whip cream with extra caster sugar and cocoa until thick. Fold through sour cream.

Step 5Place Maltesers in a small plastic bag, cover with a tea towel and bash with a rolling pin to form a rough crumb.

Step 6Ganache: Heat cream in a small saucepan until just simmering. Remove from heat and add chocolate, stirring until smooth and silky.

Step 7Carefully slide pavlova onto serving platter. Top with whipped cream mixture. Drizzle over ganache and sprinkle over crushed Maltesers. Serve.
Recipe Notes
The addition of sour cream helps counteract the sweetness of the meringue and Maltesers. Add some extra dark chocolate shavings if you must!
Try sprinkling the baking paper with a little water before piling on the meringue - this will help it not to stick.
Run a long palette knife under the cooked pavlova before sliding it onto your serving platter.
